Introduction : Garlic Oil has been extracted from bulbous roots of Allium sativum. This oil may be obtained by distillation process in Water, vinegar and alcohol to extract their properties. Essential oil is used as a supplement to aid digestion and keeps the coats of the stomach healthy.

Process of Manufacturing : Garlic has been distilled at high temperatures to extract the oil, which is mixed with vegetable or soya oil and made into capsules or mixed with tabletting agents and made into tablets. The volatile compounds can be odorous which is rich in oil-soluble compounds.

Pharmacology : Damage to the plant results in the breakdown of alliin by the co-occurring enzyme allinase to produce allicin. The allicin then undergoes a series of enzymatically catalysed reductions to produce various sulfur-containing oils. This oil is rich in sulphur, but contains no oxygen. The pecular penetrating odour of Garlic is due to this intensely smelling sulphur of allyl and is so diffusive that even when the oil is applied to the soles of the feet, its odour is exhaled by the lungs.

Chemicals in Oil : Essential oil contains allyl-propyl-disulphide, diallyl disulphide and tri- sulfides are the principal constituents. These products are more or less volatile and are responsible for the odour of garlic.
