Introduction : Allium sativum, commonly called Organic Garlic, is a bulb-forming herb of the Liliaceae. Its medical use traces back to 5,000 years ago in Asia where it was used by nomadic tribes to ward off evil spirits and improve health. The ancient Egyptians, Greeks, and Romans praised and used garlic. Hippocrates recommended its use to combat constipation and as a diuretic. Aristotle suggested its use for a cure against rabies. It was believed to give strength to the men who built the pyramids, courage to the Roman armies, and fighting spirit to the English gamecocks. During the early 1900s and the outset of World War I, British army surgeons used garlic as a bactericide.

Process of Manufacturing : Garlic extracts are obtained from aged garlic cloves. These cloves are first washed thoroughly to remove any impurities. After washing, the garlic cloves are pulped through 1/8" seive. It is followed by pulping the extract though 1/16" seive again for obtaining fine particles. The product is then pasteurized at 80-85*C. To obtain still finer particles, the product is put in a Turbo Extractor through 1mm seive. After this, the product is immedietly taken and transferred to an intermediate tank after which it is sterilised for storage.

PHARMACOLOGY OF CHIEF CHEMICALS IN GARLIC EXTRACT :
Alliinase is one of the most abundant proteins in the garlic clove, and it is the one which starts the ezymatic action to release the typical smelly flavored sulfur compounds of garlic. This protien is also believed to be responsible for varied therapeutic properties of the plant.
Alliinase is a homodimeric glycoprotein, which can be purified and crystallized from the garlic bulbs. The yellow color of the crystal arises from the presence of the cofactor vitamin B6 which is covalently bounded to the protein.
Garlic contains 3 S-alkylcysteine sulphoxides capable of producing thiosulphinates. Alliin constitutes approximately 85% of the three sulphoxides.
Allicin is a pungent oil; yellow brown in colour; synthesised from diallyl disulphide. Soluble in water and several organic solvents.Must be stored at -70 centigrade or will decompose within a few hours.
Ajoene was originally discovered after incubation of chopped garlic in methanol having remarkable activity towards inhibition of blood platelet aggregation.Stable solid showing no decay at room temperature in the absence of of solvent.

Uses of Garlic Extract :
Ajoene a sulfur-containing compound found in garlic oil decreases bacterial growth in gram negative and positive bacteria and yeast. Ajoene is not found in commercial garlic preparations, it is only found in small quantities in the natural oil.
The Ames test revealed that ajoene inhibits mutagenesis induced by both benzopyreded and 4-nitro-1,2-phenylenediamine. The inhibitions of mutagenesis by ajoene is especially effective for transition-type mutations.
Allicin and adrenosine are the most potent antiplatelet constituents of garlic because of their in vitro effects. Garlic oil administered to healthy students and patients with coronary artery disease (CAD) inhibited platelet aggregation in vivo. Low doses of garlic also appear to be effective over a long term administration.
Dithiins and ajoenes possess antithrombic properties. Ajoene is currently being developed as a drug for the treatment of thromboembolic disorders. Dithiin and ajoenes decrease clotting time because they are anticoagulants and thin blood. This activity indirectly reduces the risk of stroke and cardiovascular disease.
Potent enzymes that inhibit the activities of adenosine deaminase and cyclic AMP phosphodiesterase have been identified from garlic extracts. The presence of such enzyme inhibitors in garlic may perhaps explain its effect as an antithrombotic, vasodilatory, and anticancer combatant.
Diallytrisulfide (DATS) is a compound in garlic that lowers the spread of human lung cancer cells. The two other compounds in garlic which have anticarcinogenic properties are S-allycysteine (SAC) and diallyldisulfide.
Garlic stimulates the immune system by stimulating the activity of macrophages and helper T cells. It is also effective in treating upper respiratory viral infections and protects cell membranes from DNA damage.
