PHARMACOLOGY OF GARLIC CHEMICALS :
Intact raw garlic cells contain alliin, an amino acid and alliinase, an enzyme. When garlic is cut or crushed, alliin and alliinase immediately react together to produce the pungent substance allicin. Allicin has strong cytocidal effects and kills all sorts of cells including pathogenic bacteria.

If crushed garlic is left to stand even for a short time, the allicin quickly disappears, because it is a highly unstable compound.

Description : The bulb is compound, subspherical, covered with membranous scales containing 8-16 wedge-like compressed CLOVES. They are enclosed in a white or pink-purple tinged papery membrane; arranged circularly around a central stem-base.

Cuisines : Both raw and cooked Garlic fresh cloves are widely used, especially in Asian and southern Europe, as a flavor in a wide range of foods. Garlic is a wonderfully nutritious and healthly addition to the diet. Garlic has a very strong flavor and so is mainly used in very small quantities as a flavouring in salads and cooked foods.

Usage of fried or cooked garlic is, however, much more common. On heating, the pungency and strong odour get lost and the aroma becomes more subtle and less dominant, harmonizing perfectly with ginger, pepper, chiles and many other spices. Therefore, it is an essential ingredient for nearly every cuisine of the world.
